Food Friday - Roasted Rainbow Veggies

Wow! Uuuh, I think it's been a really long time since I've actually done a Food Friday post. So, a recap! I'm planning on getting my nutrition better as I start my training for my marathon in December. While I was finding something easy and healthy to make for my girls night out at Shakespeare in the Park, I found another side dish that is perfect for me.

The blog Simply Vegan Blog (props to Spanish bloggers Iosune and Alberto!) has a wonderful recipe for Oil Free Rainbow Roasted Vegetables. This recipe is super simple and and fool proof... A.K.A. Dot Proof!



 It turns out my balsamic vinegar was expired (drat!!!!), so I couldn't roast my veggies with a little bit of olive oil. I also used some dried Thyme leaves, salt and pepper. I stirred each section of veggies a couple times during the 25 minutes of roasting and they came up just right. The veggies weren't mushy, which was my concern, especially since I actually had to cook this dish the night before the event and keep in a refrigerator for almost 12 hrs. To still experience the balsamic vinegar taste I had a friend bring some that we sprinkle over the veggies at the park. So tasty!

This definitely on my short list of things to make!

Food Friday - Salsa and Parm Sweet Potato

One way I get a good serving of my veggies is having a sweet potato for lunch or dinner. I've paired sweet spuds with broccoli and carrots and seasoned with the classic butter, salt and pepper, but after awhile this gets pretty boring and bland.

Recently I've discovered a new blend - Salsa and Parm Sweet Potato. It's nothing fancy... simple ingredients that can be easily measured if you need to really monitor your intake. It's yummy!

Ingredients 
  • 1 sweet potato 
  • 1 TBSP butter 
  • 2 TBSP parmesan cheese (I use the good ol' powdery stuff)
  • 2 TBSP salsa 
  • Salt and Pepper to taste 
Receipt 
  • Microwave sweet potato till cooked through. I buy ones that are already wrapped in plastic, but if you buy fresh - stab poke the spud a few times with a sharp knife then wrap in a damp paper towel. Microwave for 6-8 minutes.
  • Cut cooked potato in half, spread on butter (let it melt!) and season with salt and pepper. 
  • Top potato off with parmesan cheese. 
  • Serve with salsa on the side. You could also spread the salsa on the spud, but I like prefer it on the side.

Food Friday - Eggy Spinach Taco

Welcome to my first Food Friday post. I mentioned ages and ages that one of my big goals for 2015 is to better my nutrition. I still love my junk food, but I seriously love eating healthy too. I'm not the greatest cook, but I'm certainly going to give it a try!

After my long run on Monday I ate this Eggy Spinach Taco for lunch. Until then I never made one before. I was at my parents' house, staring inside the fridge. What to eat? What to eat that is healthy? My mom is Gluten Free and my Dad, well, isn't. I grabbed a gluten free tortilla, an egg some other stuff and bam! A pretty tasty taco. This is great for a post-run meal, and have made it already a few times this week!

This is a pretty simple and customizable taco, which I like a lot. I think next time I'll be add some potatoes. Mmmmm... Potatoes. 

This reminds me of an awesome taco joint near White Rock Lake called Good 2 Go Taco. It's really tasty! Man, I just realized that I haven't been there in so long!

Ingredients 
  • 1 Tortilla, your choice 
  • 1 egg, fried or scrambled 
  • 1 handful of spinach 
  • 2 TBSP of cheese, your choice 
  • 2 TBSP salsa, your choice
  • Add any extra ingredient that you would like! 

Recipe 

1.   If desired, heat tortilla while the frying pan is warming up. Flip once. Add cheese to the tortilla after flipping. Remove from pan.

2. Cook egg to liking.

3. If desired, add spinach to pan for 30 seconds to soften up.

4. Top tortilla with cooked eggs and spinach. You can tear the spinach apart or remove the stems if you like too.

5. Add salsa on top or on the side.

6. Enjoy!


I also paired this with an apple since I was really hungry.
